Necromancy is a discipline of black magic used to communicate with the dead to foretell the future. Supposedly.Necromancers pop up frequently in the fantasy and horror genres. Think Sauron from The Lord of the Rings or The Night King from Game of Thrones.The drink takes inspiration from the Corpse Reviver No 2. Once used as a hangover cure, the original contains gin, vermouth, absinthe, lemon juice and Cointreau orange liqueur.New York bar pro Mayur Subbarao swaps out the orange for elderflower, which pairs so well with the gin.With these vibrant, refreshing flavours, it’s hard to see how this drink was given such an ominous name.But then, Mayur Subbarao is not your standard cocktail bartender.The New York spirit crafter and one time pastry chef who once founded a cocktail bitters company is a full time legal counsel working in the environmental space.
He’s also taught cocktail classes in New York. According to a 2011 interview these were very exclusive, with a secret email chain and lots of unlikely locations.Fancy learning about cocktails whilst on top of one of the eagles atop the Chrysler building? Well, according to Mayur Subbarao, that’s exactly what they did. So, perhaps with these unique and eccentric influences, it’s no wonder that the Necromancer cocktail recipe came out the way that it did. We think the name alone evokes a sense of mystery and reminds us of dark Halloween nights.
So whilst we weren’t able to chat to Mr. Subbarao about the creation of this cocktail, its reputation is perhaps best shrouded in mystery.
