At the beginning of the experience, we ordered oysters every week, but demand was not yet consistent enough to sell through all arrivals. Rather than let the product lose freshness, we looked for a way to create a recurring moment and limit waste.
Sunday, then the last evening of our operating week and already associated with jazz, became the ideal moment. We therefore began offering $1 oysters during that evening.

The promotion arrived when Bootlegger was further affirming its image as a cocktail bar. Oysters fit perfectly into our speakeasy decor, Prohibition references and New Orleans atmosphere.
They also created an obvious link between the bar and the kitchen: a fresh, convivial product that is easy to share and particularly interesting with cocktails, wine, beer, cider or certain whiskies.
From Sunday Jazz to Happy Hour
Sunday’s success exceeded our expectations. Demand was strong enough that we then integrated $1 oysters into our happy hour. The offer became accessible to people coming after work, groups and visitors who wanted to start the evening early.
Sunday nevertheless remains an emblematic combination: oysters, live jazz, cocktails and food in the same place. Because stock can run out quickly, arriving early and reserving are recommended.
