After our first encounter last year, it was the passionate team at Fove
Distillerie that truly immersed us in this fascinating world. We had the privilege of collaborating with them during exclusive events — and even hosting a special “Guest Bartender” evening at Bootlegger, celebrating local creativity and terroir.

Acerum is a one-of-a-kind spirit, distilled exclusively from the fermentation of Québec maple sap.
Since April 2025, it has officially received Protected Geographical Indication (PGI) status — a government recognition that confirms its authenticity and 100% local origin. In other words, to carry the name Acerum, it must be entirely produced in Québec, following strict standards that ensure its purity and artisanal identity.
