This month, we are thrilled to highlight a 100% Qu\u00e9becois spirit: Acerum.<\/h1>\n

After our first encounter last year, it was the passionate team at Fove
\nDistillerie that truly immersed us in this fascinating world. We had the privilege of collaborating with them during exclusive events \u2014 and even hosting a special \u201cGuest Bartender\u201d evening at Bootlegger, celebrating local creativity and terroir.<\/p>\n

Acerum is a one-of-a-kind spirit, distilled exclusively from the fermentation of Qu\u00e9bec maple sap.
\nSince April 2025, it has officially received Protected Geographical Indication (PGI) status \u2014 a government recognition that confirms its authenticity and 100% local origin. In other words, to carry the name Acerum, it must be entirely produced in Qu\u00e9bec, following strict standards that ensure its purity and artisanal identity.<\/p>\n

A product of local pride, a wonderful discovery, and above all, a perfect source of inspiration for our cocktail of the month \u2014 available at Bootlegger throughout the month! \ud83c\udf41\u2728
\nTo stay in the fall\u2013winter spirit, we are offering inspiration for a cosmo made with Acerum.<\/p>\n
