Alors quand le Bootlegger m\u2019a propos\u00e9 d\u2019\u00e9crire un article je n\u2019ai pas h\u00e9sit\u00e9 longtemps \u00e0 dire oui. J\u2019ai d\u2019abord explor\u00e9 le sujet des fromages affin\u00e9s \u00e0 l\u2019alcool pour finalement me rabattre sur les accords whisky-fromage.<\/p>\n\n\n\n<p>N\u2019\u00e9tant pas un expert du whisky, j\u2019ai d\u00fb effectuer des recherches sur le sujet. Apr\u00e8s un peu de lecture je me suis rendu compte que les principes de bases restent les m\u00eames que pour le vin et la bi\u00e8re, mais il faut \u00eatre plus d\u00e9licat dans les choix de whisky parce qu\u2019ils peuvent plus facilement prendre le dessus sur le fromage avec leur puissance. Puisque c\u2019est encore un accord un peu m\u00e9connu, je vais donc vous donnez quelques conseils pour r\u00e9ussir \u00e0 harmoniser ces deux mondes gustatifs!<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>&nbsp;Prendre un whisky et un fromage d\u2019une puissance similaire. Le whisky \u00e9tant un alcool relativement go\u00fbteux, les fromages trop doux comme les triples cr\u00e8me, les fromages frais sont \u00e0 \u00e9viter. On pr\u00e9f\u00e8rera les cheddars vieillis et les cro\u00fbtes lav\u00e9es, plus gouteuses.<\/li><li>Comme pour le fromage, le whisky se sert chambrer pour en faire ressortir tous les ar\u00f4mes. La temp\u00e9rature id\u00e9ale se situe entre 16-18\u00b0c selon Nicolas Julh\u00e8s (fondateur de la seule distillerie l\u00e9gale de Paris). Pour les fromages, il est pr\u00e9f\u00e9rable de les sortir une vingtaine, voir une trentaine de minutes avant la d\u00e9gustation. Tout d\u00e9pendant de la temp\u00e9rature ambiante bien s\u00fbr.<\/li><li>Des fromages \u00e0 vieillissement long comme le Comt\u00e9, le Cantal, les cheddars font des bons accords avec un whisky aux notes tourb\u00e9es et fum\u00e9es. Par exemple, un vieux Cantal et un Lagavulin.
